Mark Edwards Biography
Mark Edwards is a world renowned chef, he will give cooking demonstrations and particpatory sessions as well as being an excellent and inspirational motivational speaker.
Becoming a Chef
Mark Edwards has always had a keen interest in food, commencing his chef's career at age 13 when he took a part time job in a small seafood restaurant near his home in Kent. Mark furthered his interest by studying catering at college and, after obtaining his diploma in 1980, then accepting a full time position at London's Café Royal.
In 1982, Mark felt the need to broaden his culinary horizons and ventured out in to the kitchens of Europe, working in world renowned establishments such as Le Richmond Hotel in Geneva and the George V in Paris.
Cooking in the 'Big Apple'
1987 meant a move to New York, to explore 'The Big Apple', where he worked in some of Manhattan's top restaurants, including The Rainbow Room and Aurora, and he completed stages at Park Avenue Café, Les Pinnase, Aureole and Tribeca Grill.
New York is where Mark found his passion for Asian flavours, and in 1992 he moved to the Far East where he continued learning at the Orchard Hotel, Singapore, and at the Peninsula Hotel, Hong Kong.
Nobu
Moving back to England in 1994, he pursued his interest in Asian foods working at Vong London, until he teamed up with Nobu Matsuhisa to open Nobu London in February 1997 as head chef. In 1998 Nobu London obtained a Michelin star which it still retains today. Today, Mark is one of the most respected and recognised chefs in the UK.
As well as overseeing the kitchens for all the London restaurants, Mark is now executive chef for the Nobu group and works with Nobu to set up the kitchen operations for all new and forthcoming projects.
